Watermelon Popsicles

Looking for a little something to escape the heat? Give this adorable treat a try! Just blend up your fruit and freeze for a delicious summer sweet.

Special Equipment: popsicle mold, blender and fine mesh sieve


INGREDIENTS

600g fresh watermelon, seedless and cubed

30g agave nectar or honey

300g fresh kiwi, peeled and quartered


DIRECTIONS

  1. Add your cubed watermelon to your blender along with 20g of your sweetener of choice. Blend until there are no chunks left.

  2. Place a fine mesh sieve over a bowl and strain the watermelon mixture to remove the pulp and any leftover seeds from the juice.

  3. Fill each of the popsicle molds 3/4 full with the watermelon mixture. Place your popsicle sticks in and freeze for 2-2.5 hours.

  4. While your watermelon mixture is freezing, peel and quarter the kiwis and place them into the blender with 10g of your sweetener of choice.

  5. Blend until there are no chunks. No need to strain this mixture, you want the black seeds to stay in the puree.

  6. Once your watermelon mixture is frozen, top the last 1/4 of the mould with the kiwi puree, then freeze again for another 1-2 hours.

  7. Once the popsicles are completely frozen, pull them out of the moulds and serve immediately. If you are having trouble getting them out of the moulds, run warm water over the molds for about 10 seconds to release the popsicles.


TOP TIPS

  1. Have fun with the recipe and feel free to add other flavours such as lemon, lime, mint or even some chili lime seasoning.

  2. When adding in your kiwi layer, make sure the watermelon layer is completely frozen, or the kiwi puree will sink to the bottom of the popsicle.
