Millionaire Banoffee Bars

Millionaire shortbread with a tasty twist. The combination of banoffee and shortbread collide. These treats are easy to create at home following these simple steps

INGREDIENTS

250g Shortbread biscuits, crushed

50g butter

397g condensed milk

175g soft brown sugar

175g butter

2 tbsp golden syrup

1/2 tsp salt

2 bananas

200g dark chocolate, roughly chopped

50g white chocolate, roughly chopped


DIRECTIONS

  1. Line a 23cm square baking pan with parchment paper

  2. Combine crushed shortbread biscuits with melted butter and press flat into a lined baking pan. Chill in the fridge for 30 minutes

  3. In a medium saucepan, add butter, brown sugar, golden syrup and stir on medium heat until the butter melts and sugar dissolves

  4. Then add condensed milk and bring to a boil, stirring constantly for a few minutes until the mixture thickens

  5. Take off the heat and stir in the salt

  6. Slice the bananas and place over the shortbread biscuits.

  7. Pour the caramel over the bananas and biscuits

  8. Then leave to cool until set

  9. Melt dark and white chocolate separately in 30 second bursts in the microwave

  10. First pour the dark chocolate over the caramel

  11. Then spoon over the white chocolate and make swirls using a cocktail stick or a small knife to create a marble effect

  12. Leave to chill until set

  13. Then cut into squares and enjoy


TOP TIPS

  1. When melting chocolate, stir chocolate every 30 seconds to prevent the chocolate burning.

  2. Chill the finished bars long enough for the caramel to set before cutting.

  3. store in an airtight container in the fridge.
