THE ROLE
This is an exciting opportunity to join the UK’s largest and fastest-growing baking event as our new General Manager for London.
We’re seeking a strong, people focused and operationally minded leader to drive the success of our The Big London Bake South & East venues. You’ll oversee both our East London (HQ) and South London sites, ensuring smooth day to day operations. Key responsibilities include team management, sales and revenue performance, guest experience, recruitment, scheduling, stock management, and budget control.
You’ll also play a key role in driving growth and reputation, working with our marketing and sales teams to create special events that make our venues stand out in London’s competitive event scene.
Our sites boast on-site bars, hospitality suites, and guest spaces perfect for YouTube filming, celebrity visits, brand activations, press events, special occasions, and our famous 90-minute baking sessions. If you're operationally focused, highly organised, and a natural-born leader, we want to hear from you!

KEY RESPONSIBILITIES
OPERATIONS:
Daily Leadership: Oversee the day-to-day operations of The Big London Bake East & South.
Supplier Management: Manage supplier relationships, ordering, stock, and budget control.
Staff Scheduling: Coordinate staff schedules and operations based on bookings and leave requests.
Site Management: Ensure the smooth running of the site and bar, providing monthly reports.
Innovation: Implement new ideas, opportunities, and promotional activities to streamline operations.
Health and Safety: Conduct health and safety checks, risk assessments, and tasks.
Hygiene Standards: Ensure and maintain a 5-star food hygiene standard.
Reporting: Provide reports and event feedback to business owners.
TEAMS:
Team Leadership: Manage and lead a team of bakers and assistants.
Performance Reviews: Conduct reviews, disciplinaries, and set targets for staff.
Training: Organize training sessions, periodic refreshers, and ensure all documentation is up to date.
Work Environment: Foster a positive work environment.
CUSTOMER SERVICE:
Reputation Management: Ensure The Big Bakes maintains its 5-star reputation.
Review Targets: Meet monthly customer review targets.
Feedback Collection: Gather customer feedback and report to the central team.
Customer Resolution: Manage customer resolutions when necessary.
PROFITABILITY:
Sales and Revenue: Achieve monthly sales and bar revenue targets.
Financial Reporting: Report on monthly site running costs and budgeting.
Cost Control: Manage a strict cost control budget and implement effective stock control processes and ordering systems.
